Happy Monday! Yesterday was Cinco De Mayo and a great excuse to eat yummy fajitas and make Mango Salsa!
This recipe is quick and easy, and you can make it as hot or mild as you like. No cooking is needed and I mixed everything right up in my food processor.
It also makes a great hostess or anytime gift! Just fill a canning jar, add a nice fancy label, toss in a bag of chips and you’re ready to go!
This makes enough for the whole party, so if you’re entertaining there won’t be any need to double the recipe. Speaking of recipes… let’s get to it. 🙂
Mango Salsa Recipe
2 cups diced Roma tomatoes
1 1/2 cup diced mango
1/2 cup diced onion
1 – 2 jalepenos, seeded and diced
1 teaspoon sugar
1/4 to 1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon cider vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 habanero pepper, diced – optional! (this WILL make it hot!) 🙂
Mix all ingredients together in a large bowl. Refrigerate one hour before serving.
