Hey there! How’s the week going for ya? In case you couldn’t tell, I’m all geared up for Fall around here and what better way to settle in for the season than with some home cooked comfort food? I love some good southern food and I love to cook it up, but time is not a friend of mine most days and that means I’m always looking for recipes that are easy to prepare. Today, I’m going to share with you a recipe for a great hearty soup that is easy to whip up and will warm your soul on a chilly fall afternoon.
This recipe is from a great little cookbook that was gifted to me from my mother-in-law. Bless Your Heart is a collection of recipes of southern cooking for just about any occasion and endears so many of the southern traditions and comforts of home. 1 pound of ground beef
1 cup finely chopped onion
1 teaspoon salt
1 (15 oz) can Veg-All
1 (14.5 oz) can stewed tomatoes
1 (15 oz) can Spanish Rice
1 (10 oz) can diced tomatoes with green chilies
1 (15 oz) can creamed corn
Preheat a large saucepan over medium heat. When the pan is hot, add the ground beef, stirring until brown. Add the onion and salt, continue to cook for three minutes. Add the Veg-All, stewed tomatoes, rice, diced tomatoes with green chilies, and the creamed corn. Reduce the heat to low. Continue to simmer for 30 minutes, stirring occasionally. Makes 8 delicious, heart-warming servings!
